The Quick Service Restaurant (QSR) industry is growing fast. Key challenges include meeting order demand at peak times, problems with procurement/inventory management, high delivery costs and staffing needs/levels. Companies also highlight significant challenges with exponential growth in the number of ways orders arrive (delivery, mobile, mobile sitting at a table in the store, kiosk, etc.) and are picked up (drive-thru, at a curbside spot, at the counter, delivery to the table, delivery driver, etc.), which they call “channels”.
Digital Twins (DT) are a great solution. Simulation, when used for planning or assessment, can help with: (1) predicting behavior of your people, process and systems (2) improving the efficiency of your operations (3) validating the business plan for your new product rollout and (4) winning credibility for your proposal by visually communicating to a wide range of stakeholders.
The simulation model is constantly collecting data in real-time. The model can be used for running the restaurant under various scenarios, to answer questions such as:
- Staffing requirements: Determine the number of staff members needed for front counter, drive-through, cooking, and food preparation based on the restaurant’s size, customer traffic, and service goals.
- Operational optimization: Deploy staff members according to peak hours and customer flow patterns, adjust staffing and equipment utilization to minimize bottlenecks and waiting times, and explore changes in operating policies to improve queue lengths and wait times.
- Cost considerations: Evaluate the cost-benefit of adding staff, point-of-sale windows, fryers, and dine-in capacity, and find the right balance between cooking ahead of time and minimizing food wastage. Conduct a comprehensive financial analysis to estimate annual operating costs under various scenarios.
MOSIMTEC has done lots of DT projects for large QSR chains. In one project, we developed a detailed kitchen simulation model to analyze staffing levels, inventory count, menu mix impacts, financials and customer turnaround metrics. In another project, we developed a restaurant resource scheduling simulation model to analyze resource allocation to various kitchen workstations given a specific range of customer arrivals. In a third project, we provided mentoring/training on the use of dynamic simulation to improve restaurant performance. MOSIMTEC can help future-proof your business.
